Pastry Rounds:
- I cup Atkinson's plain cornmeal
- 1/2 cup sifted plain flour
- 3/4 teaspoon salt
- 1/2 cup butter
- 3 tablespoons water
Heat oven to 475ºF (very hot). Mix flour, meal and salt. Cut in shortening. Sprinkle with water. Mix with fork. Divide pastry into 2 equal parts. Roll each part into a 1/16 inch think round. on a ligthly floured cloth-covered board. Cut 9,---3 inche 1 tablespoon lemon filling between each layer. Add a dab of filling on top, sprinkle with toasted slivered almonds. Bake 10 minutes at 400ºF.
Lemon Filling
- 2, 3 ounce packages cream cheese (6 ounces total)
- 1 1/2 teaspoons lemon juice (more if desired)
- 1 tablespoon lemon rind
- 2-3 tablespoons sugar
Beat filling until fluffy and serve between pastry layers as directed above. Yields 6 servings.
