Ingredients:
- 3 large white onions
- milk to cover
- 1 cup self rising flour*
- 2 eggs, beaten slightly
- 1/2 cup sweet milk (in which onions were soaked)
- 2 cups Atkinson's self rising meal*
- deep fat
Directions:
Slice onions, separate into rings and cover with cold milk. Let stand 30 minutes, preferaby in refridgerator. Drain well, saving milk to mix with egg. Dip onion first in flour, then in beaten egg mixed with 1/2 cup milk, and again in corn meal. Fry in deep fat heated to 365ºF for about 2 minutes or until golden brown. Drain on absorbent paper.
*if plain corn meal and flour are used, add 1/2 teaspoon salt with flour and 1 teaspoon salt with corn meal
