Ingredients

  • 2 cups milk
  • 1/2 cup Atkinson's corn meal
  • 1 cup shredded chedder cheese
  • 1/3 cup butter
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon fine herbs blended (optional)
  • 2 eggs, well beaten

Directions

Scald milk; slowly spinkle corn meal over milk, stiring constantly. Continue cooking over low heat until mixture is thick, 5-10 minutes. Add cheese, butter, sugar, salt, and fine herbs; stir until cheese and butter are melted. Stir in eggs; mix well. pour into 1 quart baking dish. bake in moderate oven, 350ºF about 35 minutes or until firm. Serve immediately with butter. Makes 6 servings.
